To add captions manually or add a new segment:
Tap on Captions
Scroll to an area on the timeline that does not contain captions
Tap Add
Type out your captions
Tap Apply
To remove captions or delete a segment:
From the main navigation, tap Captions
Scroll to an area on the timeline that contains captions
Tap Delete
Alternatively, tap Delete All to remove all captions.
